Easy Mac ‘n Cheese, The Real Stuff!

Ingredients

  • 1/4 Lb Elbow Macaroni
  • 1/4 Lb Rotini
  • 2-3 C Heavy Cream
  • 16 oz Parmesan Cheese
  • 6 Slices Yellow American Cheese

Instructions

  1. Cook pasta per box instructions. Set aside.
  2. Heat 2 1/2 C of Heavy Cream in sauce pan stir frequently. Do not boil.
  3. Add 8 oz of Parmesan Cheese to mixture, stir till melted together.
  4. Add American Cheese to mixture. Stir till melted.
  5. Add more cream or cheese to suite your taste. Maybe a little salt.
  6. Pour sauce over noodles.
  7. Enjoy your new found love!

Maple-Bacon Biscuit Bake

This morning my wife got a recipe from King Arthur Flour through Facebook. We thought it looked good enough to try. So we did!

At first it sounded like a lot of work to me from the title. But it was actually very easy.  Here is a link to the recipe.

In the recipe it calls for Bakewell Cream, which is King Arthur’s own brand. We actually used cream of tartar in place of it. The recipe says to omit the baking soda and substitute 2 tsp of baking soda. We also substituted 1/2 lb of turkey bacon for real bacon.  All in all, this recipe was quick and easy. And the kids loved it as well.

Meal Hack: Velveeta Cheesy Skillets

I am obsessed with fixing things. Broken or not i will fix it or prepare mentally to fix it. So when i came across this box of Velveeta Cheesy Skillet sitting in our cupboard I got excited.  We use Velveeta products regularly, and I like them.  Even though this meal is good the way it was meant to be prepared, it was time to modify the poor little candidate!

First of all I like meat, especially Hamburger. For a while now the quality of or Beef supply seems to be slowly progressing southward. I think a lot of it comes from the increased use of corn products to feed the animals. Thats another topic though. I have been looking for alternatives to this processed hamburger. So i directly think of Chicken. A wonderful little meat it is!  Very versatile, quick to cook and can be used for substitution pretty much anywhere. We recently was given 40lbs of Chicken from Zaycon Foods. Let me say this is some yummy Chicken. I took a whole breast and diced it to replace the hamburger, Added a little Sweet Onion, and at the end about 1/2c of Picante Sauce.  What a surprise!

Ingredients:

  1. Velveeta Ultimate Cheeseburger Mac boxed dinner. (Kraft Product Locator Page)
  2. Med Sweet Onion
  3. 1/2c Picante Sauce

Directions:

  1. Follow the directions on the box, substituting Diced Onion and Chicken for the Hamburger.
  2. Add the Picante Sauce to the cooked Chicken and Onions.
  3. Add a Salad, or anything else you would like.
  4. Enjoy!

Total Time: 15m
Ingredients:
1 T Olive Oil
1C Chopped Ham
1C Chopped Red Onion
2 Med Eggs
2 Slices Bread
1/4C Diced Tomato
1/8C Cheddar Jack Cheese
Ground Pepper
Butter for Bread

Preparation:
Pre-heat skillet with Oil.
Beat the Eggs till uniform.
Saute Ham and Onions.
Add Eggs.
Stir together and cook till set.
Toast your bread and Butter it.
Place Omelet on Bread.
Top with Tomato and  Cheese.
Pepper to taste.
Enjoy!
